Sunday Recipe

Apple Squares
This recipe came from my Mother-In-Law, through her daughter (my SIL), Kelly. Mike remembers his mother making these almost every week. I've made it probably six times this summer, and now that apple season is in full tilt, I thought it would be a fun one to share. It is like apple pie with frosting that you can eat with your hands -- almost like a Hostess Fruit Pie. The trick to the recipe is sprinkling the oatmeal on the bottom crust to absorb all of the juices released by the fruit, hence, no drips. You could do this with peaches also.

For the crust:
3 1/2 cups flour
1 tsp. salt
2 T. Sugar
1 cup shortening (I use butter flavor)
1 egg yolk and enough milk to make 1 cup liquid
Mix and let rest to make pliable. Split dough in half. Roll out bottom crust and place in cookie sheet, covering the bottom. Sprinkle with 3 handfuls of oatmeal.

Filling:
8-10 apples
1 cup sugar
1 tsp. cinnamon
Mix together and spoon onto dough, leaving a one-inch edge around pan. Roll out remaining dough and put on top. Crimp edges and slit holes in the top for steam. Bake at 400 degrees for 15 minutes and then lower heat to 350 degrees for 30-40 minutes.

Frosting:
5 cups powdered sugar
1/4 cup butter
2 tsp. vanilla
Hot milk
Mix together, adding just enough milk to make frosting spreadable. Spread over apple squares. Enjoy!
